My husband took me out to dinner a couple years ago to celebrate our anniversary and I ordered a blackberry sage lemonade. It was delicious and I still think about how good it was today. I decided to try to make my own version since we have a lot of blackberries that are ready to be picked.
Blackberry Sage Simple Syrup
1-1.5 c blackberries
4-6 fresh sage leaves, cut in half
1 c water
2 c sugar
Bring water and sugar to a boil then add blackberries. Boil for 3 minutes to soften the berries and then carefully smash berries with a masher. Boil another 3 minutes then add the sage leaves, then boil with the sage for 2 minutes more. Remove from heat and let sit for 5 minutes.
Place a strainer over a bowl large enough to collect the syrup. Carefully pour the berries into the strainer and wait until the syrup has finished dripping. Press down with a spoon to force the rest of the syrup from the pulp.
The leftover berry pulp can be used as jam if desired, if you don’t mind eating the seeds.
Add a couple teaspoons of the syrup to your homemade lemonade, or favorite store bought brand if you don’t have the time to make your own. I also use this syrup in some of my favorite cocktails. It really jazzes up a mojito; muddle a couple of fresh picked blackberries in with your lime and mint and really wow your guests!
