I am from Western New York, which has a large Polish community. I ate pierogi and Polish sausage growing up even though my family was not Polish. My husband is half Polish, so I decided I should learn how to make some Polish dishes. Also, I just really like pierogi!

I decided to make two different kinds of filling for the pierogi; farmer’s cheese (which I just made!) and loaded baked potato. I tinted half the dough yellow to be able to tell the flavors apart once they were all made.
I’m hoping to be able to serve them for Easter breakfast! ??
