Sweet Home Alabama Banana Muffins

My husband and kids like their banana muffins plain and I like mine with dried cranberries. I portion out half the batter and sprinkle toffee chips on top then add dried cranberries to the rest of the batter. I use toffee chips help to tell them apart when they’re done baking and the kids think they’re getting away with eating candy with their muffins… ?

Preheat oven to 425. This recipe makes about 12 muffins using a cupcake pan.

1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
2 tsp cinnamon
1/4 tsp nutmeg
3 lg ripe bananas
5 Tbsp melted butter
2/3 cup brown sugar
1 lg egg
1 tsp vanilla

If the batter is too thick add 1-2 Tbsp milk

Optional add-ins:
1 cup chocolate chips
1 cup chopped nuts
1 cup dried cranberries
Toffee chips for garnish

Measure out dry ingredients and stir together.

Measure out wet ingredients into a mixing bowl. Combine. Slowly add dry to wet. Mix until all dry ingredients are fully incorporated.

Bake at 425 for 5 min then reduce temp to 350 for 20-25 min. This recipe could also be baked in a loaf pan, but not sure about baking time for that since I haven’t tried it yet. I would start checking it at 35 min, but will probably need at least 45 min. If you press on the top and it springs back it is done.
