Lemon Rosemary Olive Bread
I decided to create my own bread recipe today. It was either going to be epic or the chickens were going to eat a lot of bread. Thankfully, it was delicious! (Sorry chickens!)
I made 8 breadsticks and 8 rolls from one batch. I brushed melted butter and Parmesan cheese on the breadsticks and left the rolls plain.
4 cups bread flour
2 tsp salt
4 1/4 tsp instant yeast
2 tsp rosemary
1 tsp thyme
3/4 can chopped green olives (~3/4 cup)
Zest of 1 lemon
2 Tbsp olive oil
2 cups water
Optional Topping:
1/4c melted butter
1/2 cup shredded Parmesan cheese
Add ingredients to mixing bowl, knead dough 5 min, add in chopped olives and continue to knead 2-3 min more.
Let rise 90min (or until doubled in size) at room temp
Shape into rolls, breadsticks, or loaves
Let rise 30 min
Bake at 375 for 20-25 min for breadsticks and rolls. (Loaves should be around 40min, but haven’t baked loaves yet to test)
Brush with melted butter, sprinkle with Parmesan cheese. Enjoy!
