I was really impressed with how well this cordial turned out! It has the prefect balance between floral and earthy, with a subtle lemon note. I used 1 part cordial to 3 parts ice and water, which was the perfect sweetness for me, but my husband prefers 1 part cordial to 4 parts ice and water. It’s an added bonus to be able to mix a drink that’s perfect for everyone.

Elderflower Cordial

10-12 elderflower heads, collect in the morning when dry (do not wash, but lay outside for an hour in shade so any bugs have the chance to flee)
8c granulated sugar
8c water
1 lemon sliced
1 lemon zested and juiced

Boil 8 cups water. Take off heat. Add sugar and lemons, stir and wait until water is clear, then add elderflower. Let sit 24 hours. Strain and pour into bottles. Can be kept in fridge up to six weeks.

The cordial may also be used to jazz up your other favorite drinks too! Adding some to soda water is another refreshing way to enjoy it.
